Fluffy and thick, with aquafaba as a base!

Makes about 4 cups (≈ 1 litre ) of mayo.

  • 1 cup of aquafaba

  • 4 tbsp apple cider vinegar

  • 1 tsp of salt

  • 1 tbsp dijon mustard

  • 1 tsp granulated garlic

  • 2.5 cup of grapeseed oil (don't attempt with olive oil - it'll be bitter!)

Gather all of the listed ingredients and follow 3 simple steps!

  1. "Fluff up" the aquafaba for a minute in a high-speed blender (I found that "Vitamix" does the job best).

  2. Add the rest of the ingredients (except the oil) and blend for another minute.

  3. Trickle the oil slowly into the middle of mixture while blender is on it's highest speed! The important part is TRICKLING! While it is the longest part of this process, that's when all the magic happens and you'll see the transformation happening.

Don't be alarmed if the mixture gets heated or warm - it's totally fine!
