A Plum-derful Adventure: Baking Italian Plum Cake with a Twist!

Ingredients


I only used Italian Plums (prunes) in this recipe, but I'm pretty sure any type of plum will work.

For the Wet Ingredients:

- 1 can of full-fat coconut milk

- 1/2 cup coconut oil

- 2 tbsp lemon juice

- 1 tsp almond essence


For the Dry Ingredients:

- 2 cups all-purpose flour

- 1/2 cup almond flour

- 1/2 cup sugar

- 2 tsp baking powder


8-10 Italian plums, ripe and ready for adventure

Sliced almonds for a crunchy twist (optional)

I tried this recipe 5 times in various baking diches and trays from round to square to rectangle - each time it comes out perfect!

Instructions


1. Preheat oven to 350 degrees F.


2. In a mixing bowl, gather your dry ingredients - all-purpose flour, almond flour, sugar, and baking powder. Mix them up, and don't be afraid to add a dash of imagination!


3. In a separate bowl, it's time to whip up your wet ingredients. Pour in the full-fat coconut milk, melt that coconut oil, add a zesty lemon juice twist, and finish it off with a touch of almond essence. Voilà! Your wet ingredient ensemble is ready for the show.


4. Combine the wet and dry ingredients GENTLY. I'd say it's more of a careful folding with a spatula and it'll take few "folds" and done - don't overmix!


5. Grease your baking pan – a bit like giving it a warm-up stretch – and transfer in your cake batter. Smooth it out with love, just like you're tucking it into bed.


6. It's time to introduce our star players: those Italian plums! Slice them up, and let your creative juices flow as you arrange them on top of the batter. Create a plum constellation or a fruity masterpiece - the choice is yours!


7. For an extra element of surprise, sprinkle a generous helping of sliced almonds on top of the plums with a couple of spoonfuls of sugar. It's like adding a dash of whimsy to an already magical cake.


8. Pop your cake into the preheated oven and let it bake for around 50-60 minutes.


9. Once the cake has a beautiful golden glow and a toothpick comes out clean from the center, it's ready to make its grand exit from the oven.


Allow your creation to cool for a bit, but not too long – we want to dive into this adventure while it's still warm!
